Yield: Approximately 12 delicious oatmeal bites

Ingredients:
- 2 cups Bob’s Red Mill Old Fashioned Rolled Oats
- 2 tablespoons Bob’s Red Mill Flaxseed Meal
- 1/3 cup sliced almonds
- 2 tablespoons creamy peanut butter
- 1 tablespoon pure vanilla extract
- 2 tablespoons natural honey
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon coarse salt
- 1 teaspoon baking powder
- 1 large egg
- 3/4 cup almond milk (or your preferred milk alternative)
- 1/2 cup fresh blueberries
Directions:
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a standard 12-cup muffin pan with cooking spray or a small amount of oil to prevent sticking.
- In a large mixing bowl, combine the Bob’s Red Mill rolled oats with the Bob’s Red Mill flaxseed meal, sliced almonds, peanut butter, vanilla extract, honey, cinnamon, salt, and baking powder. Stir these dry and wet ingredients together until well combined.
- In a separate small bowl, whisk the egg with the almond milk until thoroughly blended. Pour this liquid mixture into the oat mixture and stir gently until all ingredients are completely incorporated and a uniform batter forms. Be careful not to overmix.
- Gently fold in the fresh blueberries. Using a tablespoon or a small ice cream scoop, fill each muffin cup approximately three-quarters full, ensuring the batter is divided evenly among all 12 cups. Gently press down on the batter in each cup to compact it slightly before baking.
- Bake for 17-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the muffin pan for 5 minutes.
