Chipotle Salmon Tacos

Ingredients:
- 1lb frozen salmon fillets (or fresh/defrosted, see Note below for instructions)
- 2 teaspoons chipotle powder
- Juice of 1 juicy lime
- Salt and freshly ground black pepper to taste
- 1/2 teaspoon brown sugar
- 1/2 teaspoon dried oregano (preferably Mexican oregano for an authentic flavor)
- 1 teaspoon olive or vegetable oil (for the paste)
- Flour or corn tortillas, warmed, for serving
Taco Fixings:
- Prepared guacamole or thinly sliced fresh avocado
- Shredded green cabbage or a ready-made cole slaw mix
- Fresh cilantro, roughly chopped
- Crumbled queso fresco (or a similar mild, crumbly cheese like Cotija)
- Thinly sliced white onion
- Lime wedges, for squeezing
Directions:
- In a small mixing bowl, combine the chipotle powder, fresh lime juice, salt, pepper, brown sugar, oregano, and 1 teaspoon of olive or vegetable oil. Mix well to create a smooth paste. Set this flavorful paste aside for later.
- Preheat your grill to a medium-high heat, aiming for approximately 400ºF. Ensure the grates are clean and lightly oiled to prevent sticking.
- If using frozen salmon: Rinse the frozen seafood under cold running water to remove any ice glaze; pat the fillets thoroughly dry with paper towels. Tear off an 18-inch wide sheet of heavy-duty aluminum foil, making sure it’s about 4-inches longer than your salmon fillets. Spray-coat the dull side of the foil with cooking spray or lightly brush with oil. Place the salmon fillets on the foil, skin side down. Lightly brush both sides of the fish with a little olive or vegetable oil. Bring the sides of the foil together and fold them over several times to create a tight seal; then, roll up the ends to form a secure packet. Place this foil packet on the preheated grill, seam side down, and cook for 8 to 10 minutes. Carefully remove the packet from the grill, open it, and evenly brush or rub the prepared chipotle paste over both sides of the salmon. Loosely crimp the foil back together to close the packet and return it to the grill, this time seam side up.
- Continue cooking the salmon for an additional 8 to 10 minutes, or until the seafood is opaque throughout and flakes easily with a fork. Cooking times may vary depending on the thickness of your fillets and grill temperature.
Note for Fresh/Defrosted Salmon:
If you’re using fresh or already defrosted salmon, you can skip the rinsing and initial foil packet steps. Simply place the salmon fillets directly into the prepared foil packet (or on a grilling plank/basket). Rub the chipotle seasoning paste over both sides of the fish and seal the foil packet. Place on the preheated grill and cook on one side for about 5 minutes, then carefully turn the packet over and cook the other side for an additional 3-4 minutes. Always check for doneness by ensuring the fish is opaque and flakes easily.
To serve:
Prepare your tortillas by warming them lightly on the grill, in a dry skillet, or in the microwave until pliable. Spread a generous layer of prepared guacamole or smear a little sliced avocado onto each warm tortilla. Gently crumble the cooked chipotle salmon over the guacamole or avocado base. Now, pile on all your favorite fixings: shredded cabbage, fresh cilantro, crumbled queso fresco, and thinly sliced white onion. Finish with a squeeze of fresh lime juice over the fish and veggies for that essential bright zest, and then… take a big, messy, delicious bite! Enjoy! 🙂
