I’ve always found that Saigon cinnamon, also known as Vietnamese cinnamon, possesses a more intense, robust, and often sweeter flavor profile compared to what is typically labeled as “regular” or “Ceylon” cinnamon. Ceylon cinnamon, often referred to as “true cinnamon,” is delicate, subtle, and complex, with citrusy notes, and is less common in most North American grocery stores where “cinnamon” usually refers to Cassia cinnamon.
Cassia cinnamon, which includes varieties like Indonesian, Chinese, and Vietnamese (Saigon) cinnamon, is generally stronger, spicier, and has a more pronounced “cinnamon” flavor due to its higher coumarin content. Saigon cinnamon, in particular, stands out for its exceptionally strong, sweet, and pungent aroma and flavor. If you have it on hand, I highly recommend using Saigon cinnamon for this recipe to achieve that extra depth and warmth that sets this snack apart.
