The Unexpected Comfort of a Simple Meal: A New Mom’s Story
Life with a newborn is a whirlwind of joy, wonder, and, let’s be honest, extreme exhaustion. When my son, Micah, was about 5 weeks old, I hit a wall. It was the kind of sleep-deprived meltdown where coherent thought felt like a luxury and tears flowed almost as frequently as baby feedings. The memory of being “so tired your brain hurts” had faded since my previous children, but with Micah, it came roaring back with full force. Every couple of hours, day and night, we were up, and the cumulative effect was taking its toll on my energy and my sanity.
One particularly challenging afternoon, a dear friend was kind enough to drop my older kids off from school. It had been one of those days where Micah refused to sleep for more than a few minutes unless he was held tight, I hadn’t managed a shower, and the idea of cooking dinner was laughable – take-out was the only foreseeable solution. The thought of my energetic school-aged kids bursting through the door, brimming with stories and homework, sent a wave of panic through my already frayed nerves. When my friend, bless her heart, simply asked, “How are you doing?”, the floodgates opened. It was humbling, to say the least, to break down like that, but her presence was a comforting reminder that I wasn’t alone in the struggles of new motherhood.
Sigh. Looking back, I’m immensely grateful for the small victories, like finally getting a little more consistent sleep now. Those early weeks were a blur, but they highlighted the incredible importance of community and support, especially for new parents. It’s during these demanding times that simple acts of kindness, like a friend stepping in, can make all the difference, providing not just practical help but also crucial emotional sustenance.
A Friend’s Kindness, A Hearty Meal: The Story Behind This Healthy Chicken Tortilla Soup
My friend came to my rescue that week in more ways than one. She picked up my kids from school for the remainder of the week, took them out to dinner one night, and, most memorably, brought us dinner on another evening. As overwhelming as that period was, I am eternally grateful she was there for me when I needed help the most. Her support wasn’t just practical; it was a profound emotional anchor, a testament to the power of true friendship.
So, what does this deeply personal anecdote have to do with a healthy Chicken Tortilla Soup recipe? Everything! This exact soup is what my friend, Heidi, brought us for dinner. You would have thought we hadn’t eaten in daaaays with how excited, thankful, and downright hungry we were when she walked through our door, not just with a pot of this amazing soup, but with all the delicious fixings to go with it. It was more than just a meal; it was a warm hug in a bowl, a tangible representation of her care and friendship, delivering much-needed nourishment when I felt I had nothing left to give.
While this isn’t Heidi’s precise recipe – I’m still patiently waiting for her to pass along her exact measurements and secret touches – I believe my version comes incredibly close. It tastes just as satisfying, hitting all the right notes of comfort and flavor every time I prepare it. This homemade chicken tortilla soup has become a cherished staple in my kitchen, especially comforting after a long, busy day or when I simply need a quick, wholesome bowl of deliciousness for lunch. There’s something truly special about a soup that not only fills you up but also makes you feel good from the inside out, and this is undoubtedly one of those healthy soup recipes. It’s a testament to simple, flavorful ingredients coming together to create something truly magical and nourishing, a perfect winter comfort food or an easy weeknight dinner.

- Protein Powerhouse: With two pounds of chicken breast, this soup provides a substantial amount of lean protein, essential for muscle repair, satiety, and sustained energy. It helps keep you feeling full longer, preventing those mid-afternoon snack attacks and supporting a balanced diet.
- Veggie-Loaded Goodness: Featuring onions, garlic, bell peppers (I often use mini red, yellow, and orange sweet peppers for extra color and sweetness), jalapeños (deseeded for less heat), fire-roasted tomatoes, black beans, hominy, and corn, this soup is a vibrant medley of vegetables. Each ingredient adds not only incredible flavor but also crucial vitamins, minerals, and fiber to your diet. The fire-roasted tomatoes, in particular, lend a smoky depth that elevates the entire dish, making it a truly flavorful chicken soup.

You control the amount of salt and pepper, ensuring a perfectly seasoned meal tailored to your taste preferences, allowing you to create a truly personalized and healthy meal.

Method: Stovetop
This healthy Chicken Tortilla Soup is exactly what you need to get your eating back on track. It’s hearty and full of protein and veggies, perfect for winter!
Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 garlic cloves, minced
- 1 large bell pepper, diced (I used about 5 mini red, yellow and orange sweet peppers)
- 1 jalapeno, diced (take out seeds for less heat!)
- 2 lbs chicken breasts (I used 3 large chicken breasts)
- 2 15 oz cans fire roasted diced tomatoes
- 2 15 oz cans black beans, drained (I use Bush’s Black Beans)
- 1 15 oz can hominy, drained
- 1 cup frozen corn
- 1 carton chicken broth (4 cups)
- 1 can of water (I like to use the tomato cans to get all the leftover flavor)
- 1 tablespoon cumin
- 1 tablespoon oregano
- salt and pepper to taste
- Toppings:
- shredded cheese
- plain Greek yogurt or sour cream
- chopped green onion
- fresh cilantro
- diced avocado
- tortilla chips
- rice
Instructions
- In a large soup pot, heat 2 tablespoons olive oil over medium-high heat and add onions, garlic and peppers. Season with a pinch of salt and pepper. Sauté for a couple of minutes until the veggies start to soften.
- Add whole chicken breasts, fire-roasted diced tomatoes, black beans, hominy, corn, chicken broth, water (using the tomato cans helps capture residual flavor), cumin, and oregano to your pot. Bring the mixture to a low boil. Reduce heat to low and let it simmer gently for about 30 minutes, or until the chicken breasts are thoroughly cooked through. You can test this by easily splitting the chicken with two forks.
- Once the chicken is cooked, carefully remove the chicken breasts from the pot onto a large plate or cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken back into the soup. (Alternatively, you can shred the chicken directly in the pot for convenience, which is often what I do!).
- Continue to cook the soup for another 15 minutes, allowing all the flavors to meld beautifully. Taste for salt and pepper and adjust seasonings as needed to achieve your perfect balance.
- Serve your hearty chicken tortilla soup hot with a generous selection of your favorite toppings. Enjoy this comforting and nutritious meal!
