A fall inspired Pumpkin Butter vinaigrette perfect to spoon over mixed greens, blue cheese and pepitas.


Ingredients

For the vinaigrette:

  • leftover pumpkin butter (whatever is left in your jar, about a tablespoon or so)
  • 1/4 cup apple cider vinegar
  • 1/41/3 cup olive oil (adjust to your preferred consistency and taste)
  • 1/21 teaspoon honey, agave or applesauce, optional (my pumpkin butter had applesauce in the ingredients, adjust to your preferred level of sweetness)
  • good pinch salt and pepper (to taste)

For the salad:

  • fresh mixed salad greens
  • crumbled blue cheese
  • toasted pumpkin seeds (pepitas)

Instructions

  1. Prepare the Vinaigrette: Gather all the ingredients for the vinaigrette. For maximum flavor and to truly live the “no waste” ethos, add the pumpkin butter (especially the last remnants from the jar), apple cider vinegar, olive oil, optional sweetener (honey, agave, or applesauce), and a generous pinch of salt and pepper directly into the almost empty pumpkin butter jar.
  2. Shake and Combine: Secure the lid tightly on the jar. Shake vigorously for at least 30-60 seconds until all the ingredients are thoroughly combined and emulsified into a smooth, creamy vinaigrette. The pumpkin butter should be completely incorporated.
  3. Taste and Adjust: Open the jar and taste the vinaigrette. This is your chance to customize it! If you prefer a sweeter dressing, add a little more honey or agave. If it needs more tang, a tiny splash more apple cider vinegar will do the trick. Adjust salt and pepper as needed.
  4. Assemble Your Salad: In a large bowl, combine your favorite mixed salad greens. Drizzle generously with your freshly made Pumpkin Butter Vinaigrette. Top with crumbled blue cheese and a scattering of toasted pumpkin seeds (pepitas) for an irresistible combination of textures and flavors.

While I often aim for a 50/50 ratio of oil to vinegar in many of my vinaigrettes, the unique consistency of pumpkin butter allows for some flexibility. Feel free to add a little extra olive oil if you prefer a richer, slightly less acidic dressing, or a touch more vinegar for a sharper bite. The key is to adjust to your personal preference and the sweetness level of your particular pumpkin butter.
