Cook Time: 4-6 hours

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, cut into half-moons
  • 2 celery stalks, chopped
  • 1/2 cup wild rice
  • 4 cups low-sodium chicken broth
  • 1 cup 2% milk
  • 1 cup water
  • 1.5 lbs boneless, skinless chicken breast
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 4 oz colby jack cheese, freshly shredded

Directions:

  1. Begin by adding all ingredients, with the exception of the shredded cheese, into your slow cooker. Give everything a good stir to ensure it’s well combined. Secure the lid and cook on high for 4 hours, or on low for 6 hours, until the chicken is cooked through and the vegetables are tender.
  2. Once the soup has finished cooking, carefully remove the chicken breasts from the slow cooker and place them on a cutting board. Using two forks, shred the chicken into bite-sized pieces, or simply cut it into chunks. Return the shredded chicken to the soup. Finally, stir in the freshly shredded Colby Jack cheese until it has completely melted and the soup is wonderfully creamy. Serve hot and enjoy!
