Oatmeal-Apple Muffins

Ingredients:
- 2 cups rolled oats (ensure they are not quick-cooking oats for the best texture)
- 1 1/2 cups milk (I used non-fat milk, but any milk will work)
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 large eggs, lightly beaten
- 1/2 cup firmly packed light brown sugar
- 1/2 cup (1 stick) unsalted butter, melted and cooled slightly
- 1 teaspoon pure vanilla extract
- 1/2 cup finely chopped apple (approximately one medium apple), optional but highly recommended for flavor and moisture
Directions:
- Preheat your oven to a temperature of 400 degrees Fahrenheit (200 degrees Celsius).
- Prepare a 12-cup standard muffin tin by greasing it thoroughly with butter or non-stick spray, or lining with paper muffin cups.
- In a medium-sized bowl, combine the rolled oats and milk. Stir well and set this mixture aside for at least 10 minutes. This allows the oats to soften and absorb some of the milk, contributing to the muffins’ moist texture.
- While the oats are soaking, in a separate, larger bowl, whisk together all the dry ingredients: all-purpose flour, baking powder, salt, and cinnamon. Create a small well in the center of the dry ingredients.
- Pour the lightly beaten eggs, melted and slightly cooled butter, light brown sugar, vanilla extract, and the oat-milk mixture into the well of the dry ingredients. Stir everything together until just combined. It’s crucial not to overmix the batter; a few lumps are perfectly normal and actually preferred for tender muffins.
- Gently fold in the finely chopped apple pieces into the batter.
- Evenly divide the batter among the prepared muffin cups, filling each approximately three-quarters full.
- Bake for 16-18 minutes, or until the muffins are lightly golden brown on top and a cake tester or toothpick inserted into the center of a muffin comes out with moist crumbs attached. Be careful not to overbake, as this can lead to dry muffins.
- Remove the muffin tin from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
