- 1/4 cup crumbled feta cheese
- 1/4 cup grated parmesan cheese
Directions:
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add the finely chopped red bell pepper, onion, the small pieces of mushroom stems, minced garlic, and Greek seasoning to the pan. Sauté this mixture for 5-8 minutes, stirring occasionally, until the vegetables are softened and fragrant. Next, add the fresh chopped spinach to the pan and continue to cook until the spinach has completely wilted down and cooked through. Remove the pan from the heat and set the mixture aside to cool slightly.
