  • 1 15 oz can cannellini or white beans, rinsed and drained
  • 3 handfuls fresh spinach, torn into small pieces
  • 1/4 cup panko or bread crumbs
  • 1/4 cup Parmesan cheese
  • red pepper flakes, for serving

Instructions

  1. Preheat oven to 400 degrees Fahrenheit (200°C). Prepare the delicata squash by cutting each in half lengthwise and scooping out the seeds with a spoon. Place the squash halves cut-side up on a baking sheet. Drizzle with 1 teaspoon of olive oil and season generously with salt and pepper. Roast for 20-25 minutes, or until the squash is fork-tender.
  2. While the squash is baking, prepare the savory stuffing. Heat the remaining 1 teaspoon of olive oil in a non-stick skillet over medium heat.
