These crispy Summer Squash Fritters are the perfect way to use up your garden zucchini and yellow squash! Easy to make and incredibly delicious, they make a wonderful snack, appetizer, or side dish that both kids and adults will love.


Ingredients

  • 2 medium zucchini, shredded using a box grater
  • 2 medium yellow squash, shredded using a box grater
  • 2 large eggs, lightly whisked
  • 4 heaping tablespoons all-purpose flour
  • 1/4 cup freshly grated Parmesan cheese (or your favorite hard cheese)
  • Big pinch of sea salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil, plus more for frying

Instructions

  1. Prepare and Drain the Squash: The most crucial step for crispy fritters is removing excess moisture. Take a small batch of your shredded zucchini and yellow squash and place it in the center of a clean, sturdy dish towel. Gather the sides of the dish towel to form a ball, then, standing over your sink, twist and squeeze the ball tightly to press out as much water as possible from the vegetables.
