Happy New Year! There’s an undeniable energy that comes with the start of a new year – it’s truly one of my favorite times (right up there with the back-to-school season!). Lemony Artichoke Hummus

Yields: Approximately 2 cups

Ingredients:

  • 2 cans (15-ounce each) Bush’s garbanzo beans (chickpeas), drained (reserve 1/4 cup of the liquid)
  • 10 oz frozen artichoke hearts, thoroughly defrosted and squeezed dry (or 1 can, 14-ounce, artichoke hearts, drained and rinsed)
  • 3 heaping tablespoons tahini (sesame paste)
  • Zest of 1 large lemon
  • Juice of 3 lemons (approximately 1/2 cup)
  • 1/4 cup fresh parsley leaves, packed
  • 1/4 – 1/3 cup extra virgin olive oil, plus more for serving
  • Coarse salt and freshly ground black pepper, to taste
  • Additional lemon juice and olive oil for garnishing and serving

Directions:

  1. Begin by placing the drained garbanzo beans (chickpeas), defrosted and squeezed artichoke hearts, tahini, lemon zest, and the juice of 3 lemons into the bowl of a large food processor.
  2. Pulse the ingredients several times until they start to break down and become chunky.
  3. Add the fresh parsley leaves to the mixture and pulse a few more times until the parsley is finely chopped and incorporated.
  4. With the food processor running continuously, slowly stream in the olive oil until the hummus becomes smooth and reaches your desired consistency. If you prefer a thinner consistency, you can add a tablespoon or two of the reserved garbanzo bean liquid.
  5. Season the hummus generously with coarse salt and freshly ground black pepper. Taste and adjust the seasonings as needed, adding more lemon juice or salt if desired.
  6. Transfer the Lemony Artichoke Hummus to a serving bowl. Drizzle with a little extra olive oil and a squeeze of fresh lemon juice just before serving. Garnish with a sprig of fresh parsley if you like.
  7. Serve immediately with your favorite pita chips, raw vegetables, or as a spread. This hummus can be stored in an airtight container in the refrigerator for up to 5-7 days.
