Golden Granola Recipe

Ingredients:

  • 1 cup maple syrup or honey
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned oats
  • ½ cup chopped hazelnuts
  • ½ cup unsalted sunflower seeds
  • ½ cup slivered almonds
  • 2 teaspoons cinnamon
  • Sprinkle of sea salt

Directions:

  1. Preheat the oven to 325°F (160°C) and generously grease a large baking sheet.
  2. In a small saucepan, combine the maple syrup (or honey) and coconut oil. Bring this mixture to a gentle simmer over low heat. Continue to simmer for approximately 4 minutes, stirring constantly to prevent sticking or burning (be careful not to splash the hot mixture). Remove the pan from the heat, stir in the vanilla extract, and set aside.
  3. In a large mixing bowl, thoroughly stir together the old-fashioned oats, chopped hazelnuts, unsalted sunflower seeds, slivered almonds, cinnamon, and a sprinkle of sea salt. Note from Jenna: I personally enjoy using an abundance of nuts in this recipe, but feel completely free to substitute with any nuts or seeds you prefer for your own unique variation. This homemade granola will remain fresh and delightful for approximately three weeks when stored in a sealed plastic container in the refrigerator, making it an incredibly quick and easy breakfast option, especially when generously topped with thick Greek yogurt and fresh banana slices.
