This healthy Pesto Pasta with Ground Turkey and Kale is a super easy 30 minute meal that will get your family eating their greens.


Ingredients

  • 1/2 lb whole wheat rotini pasta (you can use whatever shape you have)
  • 1 lb ground turkey
  • 1 teaspoon garlic powder
  • big pinch coarse salt and fresh ground pepper
  • 2 large handfuls kale, chopped into small pieces
  • 3/41 cup prepared pesto
  • 1/2 cup crumbled feta (use more if you like)

Instructions

  1. Cook pasta according to package directions until al dente.
  2. While pasta is cooking, heat a large nonstick skillet over medium heat. Add ground turkey and brown thoroughly, breaking it up with a spoon. Season the turkey with garlic powder, a generous pinch of coarse salt, and fresh ground pepper. Once the turkey is almost cooked through, add the chopped kale. Continue to cook for 5-7 minutes, stirring occasionally, until the kale has softened. Add 1/4 cup of the reserved pasta water to the turkey and kale mixture to create a light sauce. Season with a little more salt and pepper to taste. Turn off the heat once the kale is tender.
  3. When the pasta is ready, use a large slotted spoon to transfer the cooked pasta directly into the skillet with the turkey and kale mixture. (Alternatively, drain the pasta in a colander and then add it to the skillet.) Add the prepared pesto to the pasta, turkey, and kale, and toss gently until everything is well combined and coated in the pesto sauce. Finally, sprinkle in the crumbled feta cheese and give it another gentle toss. Serve immediately with fresh tomato wedges and Kalamata olives on the side for a complete meal.

For this recipe, I highly recommend using a high-quality nonstick skillet like my favorite Calphalon Unison Everyday Skillet. Its even heating and easy release make cooking and cleanup a breeze.
