Summer Cherry Almond Granola Parfaits

Delicious Homemade Cherry Almond Granola: Your Perfect Healthy Breakfast & Summertime Parfait Companion

The summer months often bring with them a relaxed pace, offering a wonderful opportunity to experiment in the kitchen, especially when it comes to breakfast. During a recent break, I found myself with a little more time in the mornings, which led to a delightful culinary adventure introducing my kids to the vibrant world of parfaits. While the concept of a parfait might not be groundbreaking, it was a revelation for my family, transforming our morning routine. Traditionally, I’m content to simply spoon a generous helping of crunchy granola over a bowl of creamy yogurt and fresh fruit. However, there’s an undeniable charm in layering ingredients beautifully, creating a visual and textural feast that makes any meal feel special. This pursuit of both health and happiness in our breakfast bowls led to the creation of this truly irresistible homemade cherry almond granola, perfect for both simple servings and elegant parfaits.

The Irresistible Allure of Cherry Almond: A Classic Flavor Pairing

There are certain flavor combinations that simply transcend time and trend, and for me, cherry and almond stand out as a match made in culinary heaven. The delightful tartness of cherries perfectly complements the sweet, nutty notes of almonds, creating a symphony for the taste buds that is both comforting and exciting. This pairing is so captivating that I find myself drawn to it in various forms, from the inviting aroma of a favorite holiday candle to the intricate layers of a gourmet dessert. My recent inspiration for this specific granola came from a bag of dried cherries I picked up, initially intending to craft a Michigan-inspired chicken salad, much like this enticing recipe. However, destiny, or perhaps my love for a hearty breakfast, had other plans, and these luscious cherries found their ideal home nestled within a batch of crunchy, golden granola. And while I’m thrilled with this granola, the thought of that cherry chicken salad on a croissant still lingers in my mind – a perfect excuse to grab more dried cherries soon!

The Undeniable Benefits of Homemade Granola

My kitchen has seen its fair share of granola recipes over the years, as evidenced by previous posts like this golden granola, cranberry spice granola, and Ellie Krieger’s nutty version. The beauty of making granola from scratch lies in its incredible versatility and the control you gain over the ingredients. Unlike many store-bought options that can be laden with excessive sugars, unhealthy fats, and artificial additives, homemade granola allows you to choose wholesome, natural components that align with your dietary preferences and health goals. This particular cherry almond granola recipe stays true to that philosophy, offering a simple yet satisfying base that can be easily customized to your liking. For this batch, I opted for honey as a natural sweetener, providing a rich, nuanced sweetness, and coconut oil, a healthy fat that contributes to a lovely crisp texture and a subtle, delightful aroma, instead of the more commonly used maple syrup and vegetable oil I sometimes employ. This flexibility is what makes homemade granola such a kitchen staple – you can stick to a foundational recipe and simply swap out fruits, nuts, and spices to create endless variations.

Crafting the Perfect Cherry Almond Granola: Tips for Success

Achieving that perfectly golden, crunchy granola is simpler than you might think. The key lies in selecting high-quality ingredients and a few careful steps. Old-fashioned rolled oats are ideal as they hold their shape and provide that classic chewy texture after baking, unlike quick oats which can become mushy. Sliced almonds not only add a beautiful visual element but also a delicate crunch and healthy fats. The addition of flax meal is a fantastic way to boost fiber and omega-3 fatty acids without altering the taste significantly. When combining your dry ingredients, ensure they are thoroughly mixed to ensure even distribution of flavors and textures. For the wet ingredients, gently warming the coconut oil and honey together ensures they fully liquify and combine seamlessly, allowing for easy coating of the oats and almonds. A touch of vanilla extract elevates the overall flavor profile, adding a warm, aromatic note.

Spreading the granola mixture evenly across two large baking sheets is crucial. This prevents overcrowding, which can steam the granola instead of baking it to a crisp. The initial baking time allows the oats and nuts to toast beautifully. Adding the dried cherries halfway through the baking process is a trick I’ve learned to prevent them from becoming too hard or burning. Stirring them in gently ensures they are warmed through and softened slightly while the granola finishes baking to a perfect golden brown. Keep a close eye on your granola during the final minutes of baking, as it can go from perfectly golden to slightly burnt very quickly. Once out of the oven, allow it to cool completely on the baking sheets. This cooling process is essential for achieving that satisfying crunch we all love in a good granola. Store your homemade cherry almond granola in an airtight container at room temperature for up to two weeks, though it rarely lasts that long in our house!

Beyond the Bowl: Elevating Breakfast with Cherry Parfaits

Once your delectable homemade cherry almond granola is cooled and ready, creating an impressive and healthy parfait is incredibly simple. The process involves layering this crunchy, flavorful granola with creamy yogurt and bursts of fresh, juicy cherries. We often switch between plain and vanilla yogurt, and both regular and Greek varieties, depending on our mood and desire for extra protein. For an extra touch of elegance and flavor, I recommend using sliced fresh cherries, especially when they are in season, to amplify the cherry experience. The vibrant red of the cherries against the white of the yogurt and the golden brown of the granola creates a truly appealing presentation that makes this simple breakfast feel like a gourmet treat. It’s a fantastic way to elevate a healthy snack or breakfast into something truly special.

The joy on my kids’ faces when I presented them with these beautiful, layered parfaits was priceless. It was one of those fleeting moments where you genuinely feel like “Mom of the Year.” These parfaits are not just visually appealing; they are packed with nutrition. The oats provide complex carbohydrates for sustained energy, almonds and flax meal offer healthy fats and fiber, and cherries are rich in antioxidants. Paired with protein-packed yogurt, this wholesome combination makes for a balanced meal that keeps you feeling satisfied and energized. While parfaits are a fantastic option, this cherry almond granola is also wonderful enjoyed simply with milk, sprinkled over fruit salads, or even as a crunchy topping for desserts. It’s the perfect versatile addition to any healthy kitchen, proving that wholesome food can also be incredibly delicious and exciting.

Ingredients:

  • 4 cups old fashioned oats
  • 2 cups sliced almonds
  • 1/4 cup flax meal
  • 2 pinches of salt
  • 1/3 cup coconut oil (can be reduced to 1/4 cup for less calories and fat)
  • 1/3 cup honey (can be reduced to 1/4 cup if you don’t have a huge sweet tooth and are watching calories)
  • 2 teaspoons vanilla
  • 1 cup whole dried cherries, roughly chopped

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large mixing bowl, combine oats, almonds, flax meal, and salt. Ensure all dry ingredients are well mixed.
  3. In a small saucepan over low heat, gently combine coconut oil and honey until completely liquified and well blended. Remove from heat and stir in the vanilla extract. Pour this warm liquid mixture evenly over the dry granola ingredients. Using a wooden spoon or spatula, gently stir until the oats and nuts are thoroughly coated in the oil and honey mixture.
  4. Spread the granola mixture evenly onto 2 large baking sheets, ensuring a single layer for optimal crispiness. Bake for 10 minutes. After 10 minutes, remove from the oven, add the roughly chopped dried cherries, and gently stir the granola mixture. Return to the oven and continue baking for an additional 10-15 minutes, or until the granola is a beautiful golden brown. Keep a close watch during the final minutes to prevent over-browning.
  5. Once baked, remove the granola from the oven and allow it to cool completely on the baking sheets. As it cools, it will become wonderfully crunchy. Store your homemade cherry almond granola in an airtight container at room temperature for up to two weeks, perfect for quick breakfasts or healthy snacking.
