  • 6-8 radishes, thinly sliced
  • 2 oz feta cheese, crumbled (adjust to your preference)
  • A generous drizzle of high-quality olive oil
  • A few pinches of za’atar (optional, but highly recommended for authentic flavor)
  • Salt and freshly ground black pepper, to taste

Directions:

  1. Begin by cooking the farro according to the package directions. Typically, this involves simmering it in plenty of salted water until it’s tender yet still retains a pleasant chewiness (al dente). Once cooked, drain the farro thoroughly and transfer it to a large mixing bowl to cool. While the farro is still warm, squeeze the fresh juice from one lemon directly over it. This infuses the grain with bright, zesty flavor from the start.
  2. Once the farro has cooled to room temperature, add the prepared cucumbers, radishes, crumbled feta cheese, and the za’atar spice blend.
