Why Grilled Chicken Makes All the Difference

The foundation of any outstanding chicken salad is, naturally, the chicken itself. While many recipes opt for boiled or baked chicken, grilling introduces an unparalleled depth of flavor and a fantastic texture that elevates this dish far beyond the ordinary. Marinating the chicken in a vibrant lemon pepper seasoning before grilling infuses every bite with a zesty, slightly smoky profile that truly sets this healthy chicken salad apart.

The Magic of Lemon Pepper Seasoning

Lemon pepper isn’t just a seasoning; it’s a flavor powerhouse. The bright, tangy notes of lemon combine perfectly with the pungent warmth of black pepper, creating a versatile blend that complements chicken beautifully. When grilled, these flavors intensify, creating a succulent and aromatic base for our salad. Grilling also provides those delightful char marks and a slightly crispy exterior while keeping the inside wonderfully juicy. I’m a huge fan of grilled chicken in general, and I make it a point to grill extra whenever I can. It’s incredibly versatile, perfect for other salads, sandwiches, quesadillas, or as the star ingredient in this very chicken salad.

Greek Yogurt: The Secret to a Lighter, Creamier Chicken Salad

One of the most common questions when it comes to healthy chicken salad is: “What can I use instead of mayo in chicken salad?” The answer, in this recipe, is simple and brilliant: Greek yogurt. By swapping out half of the traditional mayonnaise for plain Greek yogurt, we achieve a chicken salad that is significantly lighter, lower in fat, and higher in protein, without sacrificing any of the creamy texture we all love. In fact, many find that Greek yogurt adds a pleasant tang and a wonderfully smooth consistency that enhances the overall flavor profile.

Beyond Mayonnaise: Nutritional Benefits and Flavor Profile

Incorporating Greek yogurt isn’t just about cutting calories; it brings a host of nutritional benefits. Greek yogurt is packed with protein, making this chicken salad even more satisfying and perfect for post-workout recovery or a sustained energy boost. It also introduces beneficial probiotics, supporting gut health. The subtle tang of the yogurt brightens the entire dish, creating a more complex and fresh taste compared to a purely mayonnaise-based dressing. If you’re truly looking to cut down on mayo, you can even adjust the ratio further, using more Greek yogurt to your preference. It’s an incredibly versatile ingredient that transforms this recipe into a truly healthy and wholesome option.

Crafting the Perfect Blend: Ingredients and Assembly

Creating this Grilled Lemon Pepper Chicken Salad is a straightforward process that yields incredibly satisfying results. Beyond the star ingredients – the perfectly grilled lemon pepper chicken and the Greek yogurt-infused dressing – the supporting cast plays a crucial role in texture and additional flavor. Fresh, finely chopped celery adds a delightful crunch, providing a necessary contrast to the creamy dressing. Sweet Vidalia or other sweet onions contribute a mild, subtle onion flavor without overpowering the delicate lemon and tarragon notes. Tarragon, in particular, is a fantastic herb for chicken salad, offering an anise-like sweetness that complements both the lemon and the chicken beautifully.

Key Ingredients for Exceptional Flavor and Texture

  • Chicken Breast: Choose boneless, skinless chicken breasts for ease of preparation.
  • Lemon Pepper Seasoning: Essential for infusing that signature zesty flavor during grilling.
  • Oil: A touch of oil helps the seasoning adhere and prevents sticking on the grill.
  • Plain Greek Yogurt (0% Fat): The healthy hero, providing creaminess and tang.
  • Reduced Fat Mayonnaise: Balances the tang of the yogurt and provides a familiar richness.
  • Fresh Lemon Juice: Brightens the dressing and enhances the lemon notes from the chicken.
  • White Balsamic Vinegar: Adds a subtle sweet and tart acidity without darkening the dressing.
  • Dried Tarragon: Offers a unique, sophisticated herbaceous note that pairs wonderfully with chicken.
  • Sweet Onion & Celery: Crucial for crunch, freshness, and a gentle aromatic backdrop.
  • Salt & Fresh Ground Pepper: To season perfectly to your taste.

Once your chicken is grilled, cooled, and diced, it’s simply a matter of combining all the prepared ingredients with the vibrant dressing. The key is to mix everything thoroughly but gently, ensuring every piece of chicken and vegetable is coated in that luscious, tangy, and herbaceous dressing. A final taste test for seasoning ensures it’s absolutely perfect before serving.

Versatility and Meal Prep Powerhouse

This recipe for Grilled Lemon Pepper Chicken Salad with Greek Yogurt is designed with versatility in mind. It makes a substantial batch, making it absolutely perfect for feeding a crowd at your next potluck, picnic, or family gathering. But beyond large events, it truly shines as a meal prep hero. Having a container of this delicious chicken salad ready in the fridge means healthy, satisfying meals are just minutes away throughout your busy week.

Creative Serving Suggestions

The beauty of chicken salad lies in its adaptability. While some, like my daughter, adore it piled high on a buttery croissant, others might prefer a lighter approach. I often enjoy mine nestled over a bed of crisp greens, perhaps a vibrant arugula or spinach, with a side of crunchy crackers. But don’t stop there! Consider these delightful serving ideas:

  • Sandwiches & Wraps: Classic and always satisfying. Use whole-grain bread, pita pockets, or large lettuce leaves for a low-carb option.
  • Stuffed Avocados: Halve an avocado, remove the pit, and fill the cavity with a generous scoop of chicken salad.
  • Cucumber Bites: Slice cucumbers into thick rounds and top with a dollop of chicken salad for a refreshing appetizer.
  • Bell Pepper Boats: Halve bell peppers (any color), remove seeds, and fill for a colorful, crunchy vessel.
  • On Its Own: Enjoy straight from the bowl, perhaps with a handful of your favorite whole-grain crackers or veggie sticks.

It truly is one of the best chicken salads I’ve made – a testament to how simple ingredients, thoughtfully prepared, can create extraordinary flavor. Its blend of savory, tangy, and fresh notes makes it irresistible.

Ingredients

  • 3 lbs chicken breast
  • 3 tablespoons lemon pepper seasoning
  • 1 tablespoon oil
  • 3/4 cup plain 0% Greek yogurt
  • 3/4 cup reduced fat mayonnaise
  • juice from half lemon (about 1 tablespoon)
  • 1 tablespoon white balsamic vinegar
  • 2 teaspoons dried tarragon
  • 1/2 Vidalia or sweet onion, chopped (about 3/4 cups)
  • 3 celery stalks, chopped (about 1 cup)
  • coarse salt and fresh ground pepper, to taste

Instructions

  1. Preheat grill or grill pan to medium heat. Place chicken breasts into a large bowl or ziplock bag and add lemon pepper seasoning and oil. Toss around so that seasoning and oil coats all of the chicken well. (You can put in fridge to cook later at this time.)
  2. Place chicken on the grill. Cook on each side for about 6-8 minutes each, depending on size and thickness of chicken (meat thermometer should read 160-165 degrees, or use touch method).
  3. In a small bowl, make dressing for chicken salad by combining Greek yogurt, mayonnaise, lemon juice, white balsamic vinegar, dried tarragon, salt and pepper.
  4. Once chicken is cooked and cooled (it’s ok if still a little warm), dice into small pieces and place in large mixing bowl. Add onion, celery and dressing and stir to combine. Season with coarse salt and fresh ground pepper to taste.
