In the 1970s, at the youthful age of 23, he made the momentous decision to move to the United States to marry my mom, embarking on a new chapter filled with hope and the promise of a shared future. This leap of faith, leaving behind his homeland, speaks volumes about his courage and commitment to building a life with the woman he loved.

From his early days in the U.S., my dad carved out a life defined by his passion for food and an unparalleled work ethic. Rocky’s Spinach Pizza – A Family Favorite Recipe

  • 2 -3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups half and half
  • Pinch of salt
  • Freshly ground black pepper (to taste)
  • Freshly grated nutmeg (a small pinch for that special touch)
  • 8 oz frozen chopped spinach, thawed and thoroughly drained
  • Parmesan Cheese, freshly grated (for topping)
  • Mozzarella Cheese, freshly shredded (for topping)
  • Your favorite pizza dough (store-bought or homemade)

Directions:

To make the Creamy Spinach White Sauce:

  1. In a medium saucepan, melt 2-3 tablespoons of unsalted butter over medium heat. Be careful not to let it brown.
  2. Once melted, stir in 2 tablespoons of all-purpose flour. Whisk continuously for 1-2 minutes to create a smooth roux, ensuring the flour is cooked through to remove any raw taste.
  3. Gradually whisk in 2 cups of half and half to the butter mixture. Continue whisking to prevent lumps, ensuring a smooth consistency.
