Host an Unforgettable Italian Wine & Cheese Graduation Party: Recipes & Tips
Stepping into a new year often brings with it resolutions of healthier eating and fresh starts. While those intentions are certainly admirable and on my mind, I can’t help but linger a little longer on the delicious memories and celebratory moments of the past holiday season. Before diving headfirst into salads and detoxes, I want to share some highlights from a truly special celebration that involved indulging in exquisite flavors and creating lasting memories.
A few weeks prior to Christmas, our wonderful nephew, Ryan, achieved a significant academic milestone: he graduated from the University of Central Florida! To honor his hard work, dedication, and bright future, we decided to throw him a celebratory party. We wanted something elegant yet fun, easy to manage for a larger crowd, and undeniably delicious. After much deliberation, the perfect theme emerged: an exquisite Italian Wine and Cheese soirée. This theme offered versatility, a touch of sophistication, and the opportunity to showcase an array of delightful appetizers.
Planning the menu for Ryan’s graduation party was an absolute joy and a true creative outlet. There’s something incredibly satisfying about working with a specific theme when entertaining, as it provides a clear direction and allows for imaginative exploration of flavors and presentation. For our Italian Wine and Cheese theme, the undisputed star of the show, naturally, was cheese! We curated a selection of three distinct cheeses, carefully chosen to offer a variety of textures and flavor profiles. These were beautifully complemented by an assortment of crackers, crisp breads, and fresh fruit, all designed for perfect spreading and pairing.
A well-executed cheese board offers incredible versatility and is a fantastic way to cater to diverse tastes and preferences. It encourages guests to mingle, sample, and discover new favorite combinations, fostering a relaxed and interactive atmosphere. Our primary goal was to create a spread that was not only delicious but also visually appealing, inviting everyone to partake. Among our chosen cheeses, a warm and gooey Baked Brie quickly became a much-anticipated highlight. While many elaborate recipes for baked brie exist online, I opted for a wonderfully simple, yet unbelievably delicious, homemade topping that truly elevated this classic appetizer to gourmet status.
Baked Brie with Pecans: An Irresistible Appetizer for Any Gathering
Baked brie is, without a doubt, one of the most beloved and easiest party appetizers to prepare. Its warm, gooey, and buttery center, encased in a delicate edible rind, combined with a sweet and nutty topping, makes it an irresistible treat that disappears quickly. This particular recipe is a testament to how effortlessly simple ingredients can come together to create something truly spectacular and memorable. For our party, I sourced a generous round of brie, perfect for sharing among a celebratory crowd, from Costco, known for its excellent selection and great value.
Ingredients:
- 1 large round of brie (approximately 16-20 ounces, typically available at bulk stores like Costco)
- 1/3 cup of light or dark brown sugar, firmly packed
- 1/3 cup of roughly chopped pecans (for enhanced flavor and crunch, consider lightly toasting them in a dry skillet for a few minutes before use)
- 1/3 cup of unsalted butter
Instructions:
- Preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius). This moderate temperature is crucial as it allows the brie to warm through and become perfectly melted and creamy without overbaking the delicate rind or the topping.
- In a small saucepan, melt the unsalted butter over medium-low heat. Once the butter is fully melted and shimmering, stir in the brown sugar. Continue to cook, stirring frequently, until the sugar completely dissolves and the mixture is smooth and begins to bubble gently. This creates a rich, sweet caramel base.
- Add the roughly chopped pecans to the butter and sugar mixture in the saucepan. Continue to cook and stir for about 5 minutes. During this step, the pecans become beautifully infused with the sweet caramel flavor, absorbing some of the moisture and developing a delightful, slightly chewy crunch.
- Carefully place the entire round of brie onto a parchment-lined baking sheet or into a shallow, oven-safe dish. Pour the warm pecan and brown sugar mixture evenly over the top of the brie, ensuring it’s generously coated from edge to edge.
- Bake in the preheated oven for approximately 20-25 minutes, or until the brie is visibly softened, puffed up slightly, and the center feels very soft and yielding when gently pressed. The topping should be bubbly and gorgeously caramelized to a golden-brown hue.
- Once baked, carefully transfer the brie to a serving platter. Serve immediately with an array of complementary accompaniments such as crisp apple slices, fresh pear wedges, thinly sliced baguette or crostini, and your favorite gourmet crackers. The combination of warm, ultra-creamy brie with the sweet, crunchy pecan topping is an absolutely divine experience that will captivate your guests.
This baked brie was undeniably the highlight of our cheese board at Ryan’s party; it was devoured almost instantly, prompting requests for the recipe! Its rich, comforting appeal made it a firm favorite among all our guests, disappearing from the platter as quickly as we could replenish it.
Beyond Brie: Curating a Diverse and Delightful Cheese Board
While the Baked Brie stole many hearts and was undoubtedly the star, the other cheeses on our board certainly didn’t go unnoticed. I had the pleasure of finding all our cheese selections at Costco, and I was genuinely impressed by their consistent quality and unbelievably reasonable prices – making gourmet entertaining accessible. One particular wedge, beautifully adorned with dried cranberries, was a stunning addition both visually and in taste, offering a delightful sweet and tangy counterpoint. Sadly, in the joyous flurry of party preparations and subsequent cleanup, the wrapper was misplaced, and its exact name has faded from memory. This serves as a gentle reminder to always snap a quick photo of labels if you discover a cheese you absolutely love!
When assembling a diverse and engaging cheese board, variety is paramount. Aim for a mix of textures, flavors, and milk types to create an exciting culinary journey for your guests. Consider including a soft, creamy cheese like brie or goat cheese (which we’ll cover next!), a semi-hard cheese such as a robust aged cheddar, a nutty Gruyère, or a flavorful Fontina, and a harder, aged cheese like Parmesan or Pecorino Romano to truly fit the Italian theme. The cranberry-studded cheese, though nameless now, likely offered a delightful balance of fruitiness and creaminess, pairing perfectly with plain water crackers or a slice of crisp apple. Don’t be afraid to experiment with different milk types—cow, goat, and sheep’s milk cheeses each bring their own unique characteristics and nuances to the table, ensuring there’s something for every palate.
Giada De Laurentiis’ Herb Coated Goat Cheese: A Fresh & Fragrant Delight
To perfectly balance the richness of the baked brie and the other creamy selections on our cheese board, we included a refreshing and vibrantly flavored Herb Coated Goat Cheese. This exquisite recipe, inspired by the renowned Italian-American chef Giada De Laurentiis, is incredibly simple to prepare yet makes a sophisticated and striking statement on any appetizer spread. The combination of fresh, aromatic herbs and bright lemon zest creates a beautiful contrast to the tangy creaminess of the goat cheese, making it a truly unforgettable and palate-cleansing addition.
Recipe adapted from Giada De Laurentiis on Foodnetwork.com
Ingredients:
- 3 tablespoons finely chopped fresh Italian parsley leaves
- 2 1/2 teaspoons finely chopped fresh thyme leaves
- 2 teaspoons finely chopped fresh rosemary leaves
- 1 teaspoon lemon zest (from approximately 1/2 an organic lemon, ensuring no white pith)
- 1 teaspoon coarsely cracked black pepper (freshly cracked pepper offers the best flavor)
- 1/4 teaspoon sea salt or kosher salt
- 1 (11-ounce) log soft fresh goat cheese (chevre), ideally chilled slightly to make it easier to handle and coat
- 1 1/2 tablespoons extra-virgin olive oil or Meyer lemon olive oil (the latter adds a subtle, fragrant citrus note)
- Fresh herb sprigs, for garnish (e.g., small sprigs of rosemary or thyme for visual appeal)
Instructions:
- In a medium-sized, shallow bowl, combine the finely chopped Italian parsley, thyme, rosemary, lemon zest, coarsely cracked black pepper, and salt. Stir the mixture gently but thoroughly with a fork or your fingertips to ensure all the herbs and seasonings are well blended and fragrant. This creates a vibrant and aromatic coating for the cheese.
- Unwrap the log of soft fresh goat cheese. If your goat cheese is exceptionally soft, chilling it in the refrigerator for 10-15 minutes can make it firmer and easier to handle and coat without it sticking too much. Carefully roll the goat cheese log in the prepared herb mixture, pressing gently but firmly with your hands to ensure it is completely and evenly coated on all sides.
- Once the goat cheese log is beautifully coated with the herb mixture, arrange it attractively on a clean serving platter.
- Just before you are ready to serve, generously drizzle the extra-virgin olive oil (or the special Meyer lemon olive oil if you’re using it) over and around the cheese log. This step adds a beautiful sheen and another layer of delicate flavor to the finished appetizer.
- Serve immediately with an assortment of crisp crostini, artisanal crackers, and fresh fruit slices such as figs, grapes, or berries. Garnish the platter with a few fresh herb sprigs – perhaps a sprig of rosemary or thyme – to enhance its visual appeal and reinforce the fresh herbal theme. This appetizer is best enjoyed at room temperature, allowing the complex flavors of the goat cheese and herbs to fully develop and meld.
This vibrant goat cheese, with its fresh herbal crust, offers a delightful and refreshing contrast to richer cheeses and provides a wonderful palate cleanser. It’s an elegant yet effortless appetizer that truly embodies the fresh, sophisticated, and flavorful spirit of Italian-inspired entertaining, leaving a lasting impression on your guests.
