Leftover Chili Stuffed Zucchini Boats

Yield: 2 large portions or 4 smaller portions

Ingredients:

  • 2 whole zucchinis, medium-sized, trimmed, halved lengthwise, and insides carefully scooped out
  • Nonstick cooking spray or a small amount of olive oil for greasing
  • Coarse salt and freshly ground black pepper, to taste
  • 1 cup leftover chili (any variety you prefer, ensure it’s not too watery)
  • 1/4 cup – 1/3 cup shredded Mexican cheese blend (or cheddar, Monterey Jack)
  • Optional Toppings: chopped fresh cilantro, a dollop of Greek yogurt or sour cream, chopped green onion, a dash of hot sauce, diced avocado

Directions:

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Lightly grease a glass baking dish with nonstick spray or a little oil. Arrange the zucchini halves, cut-side up, in the prepared dish. Season the inside of each zucchini half generously with salt and pepper to taste.
  3. Evenly spoon approximately 1/4 cup of your leftover chili into each zucchini half, filling them completely.
