  • 1/4 cup nonfat plain Greek-style yogurt
  • 2 tablespoons chopped fresh cilantro leaves
  • Lime wedges, for garnish

Directions:

  1. Heat the olive oil in a large pot or Dutch oven over moderate heat. Add the diced onion, celery, and poblano peppers. Cook, stirring occasionally, until the vegetables soften, which usually takes about 8 minutes. Once tender, stir in the minced garlic, ground cumin, ground coriander, and cayenne pepper. Continue cooking and stirring for about 30 seconds, or until the spices become fragrant.
  2. Add the ground white meat turkey to the pot. Cook thoroughly, using a spoon to break up the meat into small crumbles, until the turkey is no longer pink. This typically takes around 2 minutes. Next, add the drained and rinsed white beans, low-sodium chicken broth, and dried oregano. Living a healthy life extends far beyond the kitchen, and it’s something our family actively embraces. This past Saturday, I participated in the Spirit of the YMCA 5k, my first 5k race in several years.
