Almond-Crusted Tilapia

Ingredients:
- 1 1/2 lbs tilapia (4-6 fillets)
- 1 cup sliced or slivered unsalted almonds, finely chopped
- 3 tablespoons plain dried breadcrumbs (I used panko)
- 2 tablespoons brown sugar
- 3/4 teaspoon reduced-sodium Old Bay Seasoning (I used regular Old Bay and less salt in rest of recipe)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon black pepper
- 1 large egg
- 1 tablespoon water
- 1/4 cup all purpose flour
Directions:
- Preheat oven to 425 degrees F (220 C). Place tilapia on cutting board and slice each fillet down the center where the fish connects to create 2 smaller fillets. Season both sides of the fish with salt and pepper and set aside.
- Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside. In a shallow bowl, combine the almonds, breadcrumbs, brown sugar, Old Bay Seasoning, salt, cinnamon, and pepper, mixing well. In another bowl, whisk together the egg and water. Place the all-purpose flour on a separate large plate.
- To bread the fish, first coat both sides with the flour, shaking off any excess. Next, dip each fillet into the egg wash, ensuring it’s fully covered. Finally, coat evenly with the nut mixture, gently pressing to ensure the crust adheres well. Place the breaded fish fillets on the prepared baking sheet, mist lightly with nonstick cooking spray, and bake until golden brown and the fish is cooked through and flakes easily with a fork, approximately 15 minutes.
