Roasted Asparagus with Balsamic, Gorgonzola and Walnuts

  • 1 bunch asparagus, trimmed and rinsed
  • 1 tablespoon olive oil
  • coarse salt and fresh ground pepper
  • 1 tablespoon good balsamic vinegar
  • 1 oz (about 2 tablespoons) crumbled gorgonzola  cheese
  • 1/8 cup chopped walnuts

Directions:

  1. Preheat oven to 450 degrees F (230 degrees C). Place the trimmed and rinsed asparagus in a single layer on a baking sheet. Drizzle generously with olive oil, then use your hands to gently toss and ensure each spear is lightly coated. Season evenly with coarse salt and freshly ground pepper.
  2. Roast in the preheated oven for about 10-12 minutes, or until the asparagus is tender-crisp and slightly browned. Cooking time may vary depending on the thickness of your asparagus spears.
  3. Carefully remove the baking sheet from the oven. Drizzle the roasted asparagus with balsamic vinegar. Immediately sprinkle the crumbled gorgonzola cheese and chopped walnuts evenly over the asparagus.
  4. Return the baking sheet to the oven and set the oven to broiler mode. Broil for 2-4 minutes, watching carefully! The cheese should begin to soften, melt slightly, and bubble, and the walnuts will become fragrant. Be vigilant as broilers can cook very quickly.
