The saga began, as it often does, in preschool, and mercifully, the parents were spared the worst of it, though my allergies have certainly been acting up, leaving my sinuses feeling congested.   • 2 tablespoons ghee or bacon drippings
  • 1 lb bulk uncooked sweet Italian chicken sausage
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 large sweet potato, peeled and cut into 1-inch pieces
  • 1/2 large bunch kale, leaves removed from stems and cut into bite-sized pieces
  • 1 1/2 quarts chicken stock
  • 2 tablespoons red wine vinegar
  • pinch of crushed red pepper flakes

Instructions

  1. Heat the ghee or bacon drippings (or your preferred cooking oil) in a large skillet over medium-high heat. Add the chicken sausage to the pan and break it up into small, even bits as it cooks thoroughly. This step is crucial for developing flavor and texture before slow cooking.
  2. When the majority of the sausage is cooked through and nicely browned, add the diced onion to the pan. Sauté for 3 to 4 minutes, stirring occasionally, until the onion begins to soften and turn translucent. Then, add the finely minced garlic and cook for another minute or so until fragrant. Transfer the entire sausage and onion mixture to a 4-quart slow cooker.
  3. Into the slow cooker with the sausage mixture, add the peeled and cubed sweet potato pieces, the bite-sized kale leaves, the rich chicken stock, the red wine vinegar for a subtle zest and brightness, and a pinch of crushed red pepper flakes for a hint of warmth.
  4. Cover the slow cooker with its lid. Cook on the ‘low’ setting for a duration of 6 to 7 hours, allowing the flavors to meld beautifully and the vegetables to become wonderfully tender. Alternatively, for a quicker cook time, set it to ‘high’ for 3 to 4 hours.
  5. Before serving, taste the soup and adjust the seasonings as needed. You may wish to add a bit more salt to taste, or another splash of red wine vinegar to brighten the flavors, to suit your personal preference. Serve warm and enjoy your wholesome, homemade meal!
