  • 2 cups Panko breadcrumbs (a mix of whole wheat and regular Panko works wonderfully for texture and nutrition)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Zest of 1 fresh lemon
  • Non-stick cooking spray or 1-2 tablespoons olive oil for drizzling
  • Fresh lemon wedges for serving
