This flavorful Smoked Salmon Frittata is a wonderfully light and easy-to-make baked egg dish, perfect for any meal. Inspired by the rich flavors of a smoked salmon quiche, this version with creamy goat cheese and fresh dill is a delightful, healthy alternative that comes together effortlessly. Ingredients

  • 1 tablespoon olive oil
  • 4 oz smoked salmon, broken into pieces
  • 6 large eggs
  • 2 tablespoons whole milk
  • 1/4 teaspoon dried dill (or 1 tbsp fresh dill, chopped)
  • coarse salt and freshly ground black pepper, to taste
  • 2 oz goat cheese, crumbled

Instructions

  1. Preheat your broiler to high.
  2. Heat the olive oil over medium heat in a 10-inch nonstick, oven-safe skillet.
  3. Add the 4 oz of smoked salmon, broken into small pieces, into the skillet and sauté gently for about 1-2 minutes to warm through. In a separate bowl, whisk the 6 eggs with the whole milk very well until the mixture is light and frothy. Carefully pour the whisked eggs into the skillet over the salmon and let it cook undisturbed for about 3-4 minutes, allowing the edges to set.
  4. Season the egg mixture generously with dried dill, coarse salt, and freshly ground black pepper. Evenly sprinkle the crumbled goat cheese over the top of the partially set frittata. Carefully transfer the skillet to the preheated broiler. Broil for 4-6 minutes, or until the eggs are completely set, puffy, and the top is lightly golden brown and slightly caramelized. Keep a close eye on it to prevent burning.
  5. Remove the frittata from the oven and let it cool slightly in the skillet for a few minutes before serving. This allows it to firm up. Slice the frittata into 4 even triangles directly in the pan or transfer to a cutting board, then serve warm.
