Our home has always been a hub for fish lovers, a tradition deeply enriched when my sister-in-law, Jamie, and her family visit from Pensacola. Cook for 3-4 minutes on the first side until a dark crust forms. Then, carefully flip the fillets. Cook for an additional 2-3 minutes on the second side. The exact cooking time will depend on the thickness of your salmon; typically, a 1-inch thick fillet will require approximately 8 minutes of total cooking time. Be vigilant to avoid overcooking, as this can dry out the fish. Once cooked, turn off the heat and let the salmon rest in the pan for 1 minute to finish cooking through gently.

Ingredients

  • 4 salmon fillets (about 1 lb)
  • blackening seasoning (such as Chef Prudhomme’s Blackened Redfish Magic)
  • 1 tablespoon olive oil
  • 2 Sunkist Cara Cara oranges, peeled and chopped
  • 2 Sunkist Minneola Tangelos, peeled and chopped
  • 1 Sunkist Meyer Lemon, peeled and chopped
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon honey
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare Citrus Salsa: In a medium bowl, combine the chopped Cara Cara oranges, Minneola tangelos, Meyer lemon (along with any juices released during chopping), fresh cilantro, honey, salt, and pepper. Gently stir to combine all ingredients. Set aside to allow flavors to meld.
  2. Season Salmon: Place the salmon fillets on a clean baking sheet. Liberally season the top side (the side without skin) of each fillet with blackening seasoning.
  3. Cook Salmon: Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat until the oil is shimmering. Carefully place each seasoned salmon fillet into the hot skillet. If your salmon fillets do not have skin, season the second side of the salmon while it’s in the pan. Cook for 3-4 minutes on the first side until a dark crust forms.
