A quick mental inventory of my kitchen revealed a treasure trove: an abundance of fresh vegetables waiting to be used up in the fridge, and a sparkling new wok I had recently snagged for an incredible deal at IKEA. The solution presented itself instantly and brilliantly: stir-fry it would be! This unexpected turn of events transformed a potential cooking dilemma into an exciting new culinary adventure, promising a dish that was not only delicious but also perfectly suited for the cozy indoors.

Firecracker Shrimp Stirfry

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 TB hot chili sauce (I use Sriracha – adjust amount to your taste)
  • 1 TB soy sauce
  • 1 TB rice vinegar
  • 1 TB oil (canola or vegetable oil works well for high-heat cooking)
  • couple of splashes fish sauce
  • 4-5 garlic cloves, pressed or minced
  • small pinch of salt, big pinch of pepper
  • 1-2 zucchinis, chopped in quarters
  • 1-2 yellow squash, chopped in quarters
  • 1 onion, thinly sliced
  • 1 red pepper, sliced in thin strips
  • 2-3 garlic cloves, minced (for stir-frying with vegetables)

Directions:

  1. To create the flavorful “Firecracker” sauce, combine the hot chili sauce, soy sauce, rice vinegar, oil (such as canola or vegetable), fish sauce, 4-5 pressed or minced garlic cloves, a small pinch of salt, and a generous pinch of freshly ground black pepper in a medium bowl. Whisk thoroughly until all ingredients are well-incorporated. Add the peeled and deveined shrimp to this sauce mixture, tossing gently to ensure each piece is fully coated in the vibrant marinade. Allow the shrimp to marinate for a few minutes while you prepare your wok.
  2. Heat your wok or a large skillet over medium-high heat until it begins to lightly smoke. Add a couple of teaspoons of canola oil or another high-smoke-point oil to the hot wok, swirling to coat the surface. Once the oil is shimmering, add the marinated shrimp in a single layer (you may need to do this in batches to avoid overcrowding, which can steam rather than sear the shrimp).   3. With the wok still hot, add the chopped vegetables (zucchini, yellow squash, onion, red pepper) and the remaining 2-3 minced garlic cloves. If the wok appears dry, you can add another small drizzle of oil.
  4. Once the vegetables have reached your desired tenderness, return the seared shrimp to the wok. Toss everything together vigorously for another 2-3 minutes to combine the flavors and ensure the shrimp is thoroughly heated through.
