Wheat Berry and Arugula Salad with Grapes and Nuts

Yield: 1 salad

Ingredients:

  • 2 handfuls fresh arugula
  • 1/3 cup cooked wheat berries (I recommend Bob’s Red Mill for quality)
  • 1 oz crumbled goat cheese
  • 1 cup sliced red or green grapes
  • 1/4 cup walnut halves, roughly chopped
  • a few splashes of good quality balsamic vinegar
  • a light drizzle of extra virgin olive oil
  • Coarse sea salt and fresh ground black pepper, to taste

Directions:

  1. In a large salad bowl or on a serving plate, gently combine the fresh arugula, cooled cooked wheat berries, sliced grapes, and chopped walnuts.
  2. Evenly distribute the crumbled goat cheese over the salad ingredients.
  3. Generously splash with balsamic vinegar and lightly drizzle with olive oil.
  4. Season to taste with coarse salt and freshly ground pepper. Toss gently to combine all ingredients and serve immediately.
