Espresso Shortbread Cookies with Irish Whiskey Glaze

Ingredients:
- 2 sticks unsalted Irish butter, at room temperature (While Irish butter like Kerrygold is ideal for its higher fat content and rich flavor, regular unsalted butter like Land O Lakes works perfectly well if that’s what you have on hand.)
- 3/4 cups granulated sugar
- 1/2 teaspoon coarse salt (Enhances the flavors and provides a subtle crunch)
- 2 cups all-purpose flour (Sifted for best results, but not strictly necessary for this forgiving recipe)
- 1 tablespoon finely ground espresso or very strong coffee (The finer the grind, the more infused the flavor will be. Adjust to your coffee preference.)
For the Irish Whiskey Glaze:
- 1/4 cup granulated sugar
- 1/4 cup quality Irish whiskey (I personally recommend Jameson for its smooth profile, but any good Irish whiskey will do. If you don’t want to commit to a full bottle, look for small “nip” bottles at your local liquor store.)
- 2 tablespoons unsalted butter
Directions:
- Preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius). In a large mixing bowl, thoroughly stir together the softened butter, sugar, and salt until light and fluffy. This creaming process incorporates air, contributing to the shortbread’s tender texture. Gradually mix in about half of the flour until just combined, then stir in the finely ground coffee or espresso. This ensures the coffee flavor is evenly distributed. Remove the saucepan from the heat and immediately whisk in the 2 tablespoons of butter until it’s completely melted and incorporated, creating a smooth, glossy syrup. Then, whisk in the remaining whiskey. Allow the glaze to set and thicken slightly for about 1 minute – it should be pourable but not too runny, ensuring it adheres beautifully to the cookies. Spoon the warm glaze evenly over the cooled shortbread wedges, using the back of your spoon to spread it if necessary. Once the glaze has set, carefully remove the individual cookies from the pan.
