- 8 oz bag fresh spinach
- 3/4 cup shredded mozzarella cheese (or a blend like Italian mix)
Directions:
- Prepare the Potatoes: Place the thinly sliced potatoes in a medium-sized microwave-safe glass bowl. Sprinkle them with a generous pinch of coarse salt and pepper, then add 1/4 cup of water. Stir or toss the potatoes with your hands to ensure they are evenly coated. Microwave the potatoes on high for 4 minutes. Stir them thoroughly, then microwave for an additional 2 to 4 minutes, or until they are fork-tender. This crucial step significantly reduces the overall cooking time in the skillet. Alternatively, you can boil the sliced potatoes in a pot of salted water until fork-tender, approximately 8 to 10 minutes, then drain well before adding to the skillet.
- Cook the Sausage: While the potatoes are par-cooking, heat 1 teaspoon of olive oil in a large, heavy-bottomed skillet over medium-high heat.
