- ½ red onion, finely diced
- 1 can (14 oz) artichoke hearts, drained and diced
- 1/4 cup sliced Kalamata olives
- 1 roasted red pepper, diced (jarred or fresh)
- 3 TBSP Extra Virgin Olive Oil
- 2 TBSP red wine vinegar
- ¼ tsp black pepper
- 4 oz crumbled feta cheese
Directions:
- Cook couscous according to package directions. For enhanced flavor, remember to season the water or broth with a sprinkle of garlic powder, salt, pepper, and a drizzle of olive oil while it cooks. This simple step adds an extra layer of taste to the base of your salad.
