Just a few weeks ago, I embarked on an unforgettable journey, spending a fascinating morning at Milk-A-Way Dairy, a bustling dairy farm nestled just a couple of hours away from my home in Florida. What unfolded in those few short hours was nothing short of an eye-opening and profoundly educational experience. I gained an incredible depth of knowledge about the intricate world of modern dairy farming, the dedicated families and individuals who pour their hearts into this essential work, and the magnificent dairy cows themselves, whose welfare is paramount to the operation.

Meeting the Stewards: The Farm and Its Dedicated Farmers
During my visit to Milk-A-Way Dairy, I had the distinct pleasure of meeting Johan Heijkoop, a passionate dairy farmer who, alongside his partner Gary Keyes, expertly owns and operates this vibrant farm. He works hand-in-hand with his devoted wife, Trisha, and their four children, making it a true family enterprise. Both Johan and Trisha were raised in families deeply rooted in dairy farming, where cows were a way of life. This rich heritage means dairy farming is not just a business but an ingrained part of their identity, a calling for which they possess an incredible passion, profound knowledge, and unwavering dedication. This commitment is vividly evident in every aspect of their meticulously run family farm.
Johan generously took the time to personally guide us through the entire farm, showcasing the expansive pastures where the cows roam freely, the state-of-the-art milking parlor, and, of course, introducing us to his cherished herd. Throughout the tour, he meticulously explained the comprehensive farm-to-table process, demystifying how the fresh, wholesome milk we enjoy daily makes its way from their farm to our breakfast tables. It was truly fascinating to learn that because most consumers in the U.S. live within a 100-mile radius of a dairy farm, the milk produced right here at Milk-A-Way Dairy is very likely the very same nourishing milk my own family consumes at home. This local connection, emphasizing the freshness and direct journey of our food, was a wonderful and comforting revelation about Florida dairy.

Milk-A-Way Dairy is beautifully situated in the charming, small town of Webster, Florida. An interesting personal anecdote: both Johan and his wife Trisha are proud alumni of the University of Florida, the very same esteemed institution I also attended. Coincidentally, Johan and I even graduated from UF in the same year, separated by just a few months. There’s an undeniable, instant camaraderie that forms when you meet a fellow Gator, and this shared experience created an immediate and strong bond during our visit, making the educational tour even more engaging and personal.
One of the most striking observations I made immediately upon arriving was the sheer efficiency with which modern dairy farms operate. Milk-A-Way Dairy, while home to approximately 700 cows, is considered one of the smaller, yet highly productive, farms within the vast state of Florida. Despite its relative size, every single person on the farm has a clearly defined and crucial role, contributing to the meticulous care of the cows and the seamless operation of the entire facility. The cows are given ample space to roam across the farm’s green pastures, enjoying a natural environment, and are then gently guided into a specialized parlor twice daily for milking and feeding. While freely roaming, their comfort and well-being are prioritized with abundant shade structures, readily accessible fresh water sources, and nourishing hay, ensuring they remain comfortable, especially amidst Florida’s characteristic warm and humid elements. I found the cows themselves to be incredibly curious animals, showing a genuine interest in our presence. Many turned their heads, observing us intently, and even walked over to investigate what we were doing. I also learned that cows are creatures of habit – they thrive on routine and adhere to it with remarkable precision. We witnessed one particular cow assertively pushing its way through the line, eager to secure its designated spot. This perfectly illustrated how deeply ingrained their routine is; cows understand their precise place in the milking and feeding order and are certainly not inclined to miss their scheduled mealtime! This demonstrates the impressive intelligence and instinct of these dairy animals.

The milking parlor itself is thoughtfully designed with the cows’ comfort in mind, equipped with powerful industrial fans to circulate air and multiple water stations to keep them hydrated and cool. For a typical day in August, renowned for its intense Florida heat and humidity, I was genuinely and pleasantly surprised by how remarkably comfortable and cool the temperature was within the parlor. This emphasis on comfort and climate control underscores the dedicated cow care practices at Milk-A-Way Dairy, showcasing their commitment to animal welfare and optimal milk production.
Prioritizing Well-being: The Cows and Their Exceptional Care

Observing the cows in their natural element, going about their daily lives on the farm, truly brightened my day. They are undeniably charming and endlessly entertaining to watch! At Milk-A-Way Dairy, you can find a few distinct breeds of dairy cows, each contributing uniquely to the farm’s operations and the diversity of their milk production. Among them are the iconic Holstein (beautifully depicted above), instantly recognizable by their striking black and white spotted coats, which are by far the most prevalent breed in Florida and globally. These impressive animals can grow to weigh up to 1,400 pounds or even more, making them excellent milk producers. The Jersey cows, in contrast, are on the smaller side, characterized by their soft, rich brown coloration and incredibly sweet, expressive eyes. Their milk is particularly prized for its higher butterfat content, making it an ideal choice for creamier dairy products such as artisanal cheeses and rich ice creams. We also saw some distinct Guernsey cows, known for their golden-colored milk. Each breed plays a vital role in the diverse landscape of dairy farming, contributing to the rich variety of dairy products we enjoy.


The nutritional well-being of the cows at Milk-A-Way Dairy is managed with scientific precision and great care. They are provided with a carefully crafted, balanced diet that includes high-quality hay for essential fiber, nutrient-rich grains, various protein sources, and vital vitamins and minerals, all essential for their health and milk production. Johan further elaborated on their innovative feeding practices, showing us some of the feed components. A particularly interesting aspect is the inclusion of naturally recycled regional ingredients such as citrus pulp and whole cottonseed. Not only do these additions enhance the nutritional profile of the feed, providing a wholesome diet for the cows, but they also represent a significant commitment to sustainable farming practices. Utilizing what would otherwise be considered waste products, such as citrus pulp from Florida’s abundant orange groves and cottonseed from local agriculture, prevents these materials from ending up in landfills. This smart approach minimizes waste, adds crucial nutrients, and exemplifies the circular economy principles employed by modern dairy farms, making their operation both efficient and environmentally conscious.

Without a doubt, the absolute highlight of my time on the farm was the invaluable opportunity to get a little more up close and personal with the cows, especially by their serene cooling pond. This natural oasis, fed by cool spring water, serves as a cherished retreat where a large group of the cows spend their time, either resting on the lush banks or leisurely wading and cooling off in the refreshing water. This innovative cooling pond is just one of the thoughtful comforts the farm provides, ensuring the cows can stay cool and content during the often-sultry Florida summer months. Witnessing their peaceful enjoyment of this natural spa was a truly heartwarming sight and a powerful testament to the compassionate animal welfare practices at Milk-A-Way Dairy. It’s clear that their health and happiness are a top priority, contributing directly to the quality of the fresh dairy products we eventually enjoy.

- 1 cup light sour cream
- 4 oz Monterey Jack cheese, freshly shredded

- 3 tablespoons sliced black olives
