Hello, wonderful readers! As I sit here writing this, a whirlwind of emotions and monumental life changes are sweeping through my world. Can you believe it? I’m due to have a baby in just over a week! It feels like only yesterday I was sharing my initial pregnancy news, and now the countdown is in its final, exhilarating stretch. The anticipation is immense, filled with both nervous jitters and boundless excitement for the newest member of our family. This little one is certainly making an grand entrance, arriving amidst a flurry of other significant events that have turned our lives delightfully upside down.

A New Chapter: Our Journey to a New Home

Yes, all these major life shifts, including the start of a new school year for the kids, have converged in a very short span. While the timing might seem a bit, well, “crazy” (a word I’ve used more times than I can count lately!), I genuinely believe it’s happening exactly as it’s meant to be. To be honest, I’m borderline losing my mind with all the logistics, but in a strange, almost serene way, I’m also handling it with a surprising calm. Does that even make sense? Probably not, but that’s life right now!

Our quest for a new home, one with a little more space to accommodate our growing family, began last December. We patiently scoured listings, visited open houses, and dreamt of a place that would truly feel like our next chapter. Over the summer, I admit, I pretty much paused the house hunt. The thought of moving just weeks before a baby arrived seemed like pure madness – a logistical nightmare I was determined to avoid. Oh, the irony! As fate would have it, our dream home popped onto the market at the most unexpected time. I tried to resist, telling myself not to fall in love, especially with my due date looming. But the moment I stepped through its doors, there was an undeniable connection, an intrinsic feeling that this was it – this was going to be our new home. It was truly a “love at first sight” scenario, a feeling I’ve never quite experienced with a house before.

The universe, it seems, was orchestrating things beautifully. What’s even more astonishing is how quickly our current house sold. It was on the market for less than a day! I’m still trying to process the speed and serendipity of it all. For a while, I was almost afraid to speak about it too loudly, not wanting to jinx what felt like an incredible, yet fragile, blessing. But now that the pieces are falling into place, I can wholeheartedly say it was truly meant to be.

So, needless to say, life has been a beautiful whirlwind of “crazy” lately. But it’s a good kind of crazy, a deeply blessed feeling that fills me with immense gratitude. I’m so excited for my family and for all the incredible moments that await us in the coming weeks. There’s a definite bittersweetness in leaving the home where we’ve built eight years of memories, the house where my babies took their first steps and grew up. But I know that all those precious memories are coming with us, and a whole new set of memories are waiting to be made just around the corner – literally, less than two miles away!

In the meantime, while we navigate these exciting life changes, I wanted to share a quick, incredibly healthy, and delicious side dish to keep you nourished. Throughout my pregnancy, healthy greens and I weren’t exactly “jiving,” which was a bit frustrating given their incredible nutritional benefits. To make life easier, especially with everything going on, I’ve been relying on those convenient big bags of pre-cut kale. Beyond turning them into crunchy kale chips, my go-to preparation lately has been a simple yet flavorful sauté. This recipe combines fresh kale with a generous squeeze of lemon, a drizzle of high-quality olive oil, and the delightful crunch of toasted pine nuts. The result is a vibrant, lemony dish that truly makes my mouth sing! If you adore the bright, zesty flavor of lemon, you’ll absolutely love the extra zing it brings to this dish.
