As the new year approaches, one of my personal culinary resolutions is to dive back into my cherished collection of cookbooks. Over the past few years, my focus has largely shifted to developing and testing original recipes to share here on the blog, which, while rewarding, has meant my beloved cookbooks have gathered a bit of dust. It’s time to rediscover the inspiration held within those pages! One of my recent and highly practical acquisitions is the fantastic Sheet Pan Suppers cookbook by Molly Gilbert. This book has become a true game-changer, demonstrating how to create entire, balanced meals using just one pan. Today’s incredible Chinese Five Spice Pork Chops with Broccoli and the surprising addition of roasted pineapple draws its inspiration directly from its innovative pages, offering a vibrant, healthy, and incredibly convenient meal solution.

This recipe also aligns perfectly with this month’s Recipe Redux challenge. The Recipe Redux is a fantastic monthly event where a community of dietitians and healthy food bloggers come together to reinterpret recipes with a healthier twist based on a specific theme. This month’s theme, “Grab a Book and Cook,” was exactly the motivation I needed to dust off those cookbook covers and get cooking! To celebrate Recipe Redux’s 54th month, we were tasked with finding a recipe on page 54 or 154 of a nearby cookbook and giving it a wholesome makeover. While my “holiday brain” might have led me to page 123 (oops!) of my Sheet Pan Suppers book, the serendipitous discovery of a pork chop recipe couldn’t have been more perfect, as I had pork chops defrosting for dinner already. This delightful deviation led to the creation of this stunning sheet pan meal that my entire family adored.
