As a parent, I know the struggle well: those bottomless pits that are our children’s appetites! It often feels like they’re always eating, with one meal barely cleared before the requests for a snack begin. And honestly, I wouldn’t have it any other way. Seeing their genuine love for food warms my Italian mama heart to its core. However, keeping a constant supply of smart, healthy snack options available can be a real challenge. We all want to steer them away from junk food, but providing variety and excitement can be tough when they inevitably get bored with the usual rotation of yogurt, cheese sticks, fruit, or granola bars.
A few weeks ago, during a long holiday weekend from school, I decided it was time to introduce a fresh, new kind of snack into our routine. My kids are absolutely obsessed with parfaits, and they ask for them constantly. This keeps me busy in the granola-making department, which I admit I don’t do as often as I should, simply because we go through it so quickly!
