Breakfast Fruit Skewers
Yield: 4 servings, makes 8 skewers

Ingredients:
- 4 frozen whole wheat waffles, cut into quarters
- 1/2 cup almond butter (or other nut/seed butter of choice)
- 2 large bananas, cut into 16 1-inch pieces
- 1 Coast Tropical mango, peeled and cut into 8 pieces
- 16 Driscolls raspberries
- 3 tablespoons unsweetened shredded coconut, optional (for garnish and added flavor)
- Drizzle of honey or maple syrup, optional (for a touch of sweetness)
Directions:
- Begin by preparing your whole wheat waffles according to package directions, then allow them to cool slightly. Once cooled, cut each waffle into four equal quarter-sized triangles.
- Carefully spread a thin, even layer of almond butter onto one side of each waffle quarter. This acts as both a delicious adhesive and a source of healthy fats and protein.
- Now, it’s time to assemble your skewers! Take a skewer (wooden or a plastic beverage stirrer for smaller hands) and alternate threading the ingredients. A good pattern could be: 1 raspberry, 1 banana slice, 1 waffle triangle, 1 mango piece, another raspberry, another banana slice, and finally another waffle triangle. Repeat this process until you have 8 beautifully arranged skewers.
