  • 6 cups cubed watermelon, chilled and preferably seedless
  • 1/2 cup crumbled feta cheese
  • 1012 large fresh basil leaves, julienned (or thinly sliced)
  • very thin sliced red onion, just a few slices (optional, for a subtle tang)
  • 3 tablespoons pistachios, roughly chopped (optional, for crunch)
  • 3 tablespoons balsamic vinegar, or to taste
  • coarse salt and fresh ground black pepper, to taste
