For this recipe, I took a delightful shortcut and used readily available whole wheat naan bread, which I picked up from the grocery store. It provides a fantastic base that crisps up beautifully on the grill. However, feel free to use your favorite homemade flatbread recipe or store-bought pizza dough – the key is a sturdy base that can handle the grill’s heat. The beauty of this recipe lies in its adaptability, allowing you to customize the crust to your preference.

This vibrant grilled summer squash pizza is a delightful celebration of seasonal produce, combining smoky grilled vegetables with a crispy crust, savory cheese, and fresh basil. Perfect for a light dinner or entertaining, it’s a simple recipe that truly highlights the fresh flavors of warmer months.


Ingredients

  • 1 lb pizza or flat bread dough (I used Na’an bread for convenience)
  • All-purpose flour, for sprinkling
  • 4 baby summer squash, such as zucchini, yellow summer squash, or patty pan
  • Olive oil, for brushing
  • Salt to taste
  • 1 teaspoon lemon pepper seasoning
  • 1/2 cup grated Romano or Asiago cheese (or a blend)
  • 1/2 cup finely chopped fresh basil

Instructions

  1. If using raw dough, divide it into four equal parts and press or roll each piece into an 8-inch circle. Lightly sprinkle flour on two large baking sheets and place two rounds of dough on each sheet, setting aside for a moment.
  2. Prepare your grill for indirect cooking by establishing a hot fire on one side. Oil a perforated grill rack (this prevents sticking and helps achieve even cooking) and place it over the direct heat side to preheat.
  3. Slice your summer squash into 1/4″ to 1/2″ planks. In a bowl, gently toss the squash slices with a drizzle of olive oil to coat evenly. Transfer the oiled squash to the preheated perforated grill rack and grill, turning often, until they are slightly charred, tender, and softened, which usually takes about 15 to 20 minutes depending on your grill’s heat. Once grilled, quickly chop the squash into approximately 1-inch pieces and sprinkle generously with salt and lemon pepper seasoning.
  4. To grill the pizza dough directly on the grill grates, brush one side of each pizza dough round with olive oil. Carefully place the dough, oil side down, onto the direct heat side of the grill. Grill for 1 to 2 minutes, or until you begin to see bubbles forming on the dough’s surface and slight grill marks on the bottom. Brush the top side of each dough with olive oil and, using tongs, flip each pizza onto a baking sheet. Immediately brush the flipped side with a little more olive oil, then quickly spoon approximately 1/4 of the grilled squash topping over each pizza and sprinkle with the grated Romano or Asiago cheese.
  5. Using a grill spatula, carefully transfer each topped pizza to the indirect heat side of the grill. Cover the grill and cook for 4 to 5 minutes, or until the cheese is beautifully melted and bubbly, and the crust is cooked through and lightly crisped. Remove from the grill, top generously with fresh basil, and serve hot.

 


Notes

Note for Pre-Cooked Flatbread: If you’re using an already cooked flatbread like naan or pita, you can skip the initial oiling of the dough and place it directly on the grill grate over indirect heat to warm up the side that will receive the squash topping. Once warm, flip it over, apply the squash topping and cheese to the other side, cover the grill, and cook for 4 to 5 minutes or until the cheese is melted and bubbly. This shortcut makes for an even quicker weeknight meal!

  • Have Everything Ready: Grilling pizza is fast-paced. Have all your ingredients prepped and near the grill so you can assemble and cook quickly.
  • Don’t Forget the Olive Oil: Brushing the dough with olive oil prevents sticking, helps with browning, and adds a lovely flavor.

While this recipe is fantastic as written, don’t hesitate to get creative with your grilled summer squash pizza!
