- 1 1/2 lbs fresh green beans, trimmed and cut into 1-inch-long pieces
- 1 (15-ounce) can garbanzo beans (chickpeas), rinsed and thoroughly drained
- 1 (15-ounce) can red kidney beans, rinsed and thoroughly drained
- 1 large Vidalia onion, peeled and thinly sliced into delicate rings or half-moons
For the Sweet & Tangy Dressing:
- 1 cup apple cider vinegar, for a subtly fruity tang
- 1/4 cup granulated sugar, to balance the acidity
- 1/2 cup canola oil (or a neutral oil like grapeseed), to emulsify the dressing
- 2 medium cloves garlic, pressed through a garlic press (or finely minced)
- 1 teaspoon sea salt (or to taste)
- Freshly ground black pepper, to taste
Instructions
- Prepare the Dressing: In a small saucepan, combine the apple cider vinegar, sugar, canola oil, pressed garlic, salt, and pepper.
