It’s an adjustment, but it also signals something wonderful: summer is just around the corner! For anyone with school-aged children, you know that the stretch between Spring Break and Summer Break vanishes in an instant. And with summer on the horizon, my thoughts naturally drift to light, refreshing meals, which brings me back to the star of today’s post: this incredible Green Mango Salad.

Dutch and Rosie hopped into our lives about seven weeks ago. Their mom, Betty, joined our family over the holidays, a sweet adoption from our thoughtful neighbors. Betty wasn’t pregnant when we welcomed her, so you can imagine our surprise one Sunday afternoon when we checked her hutch only to find what my daughter initially mistook for mice (or perhaps tiny rats?), which turned out to be six incredibly tiny newborn bunnies! Sadly, four of the six didn’t make it, but Dutch and Rosie were strong and healthy from the very beginning. They are, without a doubt, the cutest, most adorable little animals I’ve ever seen. They bring endless smiles and an extra layer of warmth to our home.
