If you’ve never had the pleasure of tasting homemade granola, then you are truly in for an exceptional treat. The experience is miles beyond anything you’d find pre-packaged at the store. Homemade granola offers an incredible level of versatility, allowing you to easily adapt the recipe based on what ingredients you have readily available in your pantry. For instance, the original recipe called for pecans, but I was out, so I effortlessly substituted them with sliced almonds, and the result was equally delicious!
This particular Cranberry Spice Granola is a testament to how simple ingredients, when combined with the right balance of spices, can create something truly extraordinary. Ingredients:
- 1/3 cup vegetable oil (I cut this down to about a 1/4 cup for a lighter result)
- 3 cups old-fashioned rolled oats (ensure they are not quick-cooking oats for the best texture)
- 1 cup sweetened shredded coconut (I opted for the unsweetened variety to control sweetness)
- 1 cup chopped pecans (sliced almonds make a great substitute if preferred or unavailable)
- 1 teaspoon sea salt or kosher salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 teaspoon pure vanilla extract
- 1/2 cup pure maple syrup
- 1/4 cup apple cider or apple juice
- 1 cup dried cranberries
Directions:
- Preheat your oven to 350 degrees Fahrenheit (175°C). Prepare a large, rimmed baking sheet by lightly greasing it with a small amount of vegetable oil or coating it with non-stick cooking spray. Set this aside.
- In a spacious mixing bowl, combine the dry ingredients: oats, shredded coconut, chopped nuts (pecans or almonds), sea salt, ground cinnamon, ground nutmeg, and ground ginger. Use a spoon to gently stir these together until all the oats and spices are thoroughly mixed and evenly distributed. In a separate, smaller bowl, whisk together the wet ingredients: vegetable oil, vanilla extract, maple syrup, and apple juice or cider. Pour this liquid mixture over the dry oat mixture. Continue to stir carefully and gently until all the oats are completely combined and uniformly coated with the liquids.
- Spread the oat mixture evenly onto your prepared baking sheet in a single layer. Bake for 10 minutes. After the initial 10 minutes, remove the baking sheet from the oven and carefully stir the granola. This step is crucial for ensuring that the granola toasts up evenly on all sides. Return the baking sheet to the oven and continue to cook for an additional 10-12 minutes, or until the granola turns a beautiful golden brown and appears crispy.
- Once baked, remove the pan from the oven. Immediately add the dried cranberries to the hot granola and stir them in to combine. This allows the residual heat to slightly soften the cranberries, enhancing their flavor. Let the granola cool completely on the baking sheet.
- Once fully cooled, transfer the homemade Cranberry Spice Granola to an airtight container. Store it in a cool, dry place to maintain its freshness and crunch. It will keep well for up to two weeks, ready to be enjoyed as a quick snack, breakfast topping, or delightful dessert addition.
