  • 2 medium red, orange or yellow bell pepper, sliced into thin strips
  • 1 sweet Vidalia onion, sliced thin
  • 2 cans (15-ounce each) pinto beans, drained and thoroughly rinsed (I often use Bush’s Pinto Beans for their consistent quality)
  • 1 garlic clove, freshly pressed or very finely minced
  • 1/4 teaspoon ground cumin
  • 1 large lime, freshly juiced
  • 2 tablespoons light oil (grapeseed oil is excellent for its neutral flavor, but a good quality extra virgin olive oil works wonderfully too)
  • Generous pinch coarse sea salt and fresh ground black pepper, to taste

Directions:

  1. In a large mixing bowl, combine the sliced bell peppers, thin-sliced Vidalia onion, drained and rinsed pinto beans, pressed garlic, ground cumin, freshly squeezed lime juice, and light oil.
